Peruvian Pan Con Chicharron
Ingredients:
2 tbsp vegan garlic butter
3 tbsp Vegan Mayonnaise
½ cup green bell pepper
1 tbsp lemon juice
1 tbsp Freshly chopped coriander
1 cup coriander
3 cloves of garlic
1 cup soaked, sliced red onion
Flat bread like baguette or ciabatta or a bun
1 cup of sweet potato discs
Lettuce
Method:
Make the sauce by blending coriander, bell peppers, garlic , lime juice and vegan mayonnaise.
Salsa criolla - mix the red onions, coriander and lime juice.
Pan fry the pepperoni.
Pan fry the sweet potato in the pepperoni oil
Cut the bread and lather vegan garlic butter.
Assemble - aji verde, lettuce, sweet potato, pepperoni and top up with salsa criolla.
